From the bustling heart of North Denver came the warmth of Pagliacci’s—a charming Italian restaurant where the scent of garlic, fresh basil, and simmering tomato sauce danced through the air like an old family melody. Her roots, a vibrant blend of Italian and Irish heritage, meant that family gatherings were always a celebration of flavors—spaghetti and meatballs were never just dinner, they were rituals.
Her grandfather, who opened up Pagliaccis with a twinkle in his eye and a taste for classic Italian food, poured his soul into this restaurant where every dish served at Pagliacci’s was amazingly delicious! For Jessica, food was never just food—it was a memory, it was a legacy.
Now, with a shared passion for creating elevated home-style dishes, Tony & Jessica are weaving the old with the new. They believe the best meals are born from history and seasoned with innovation. Every dish they serve pays tribute to where they've come from—and where they're going.

My passion for cooking good food has been shaped by the incredible experiences I've had working for some of the culinary world's most respected chefs. At Postino in Lafayette, California, I worked under Iron Chef Cat Cora, learning the importance of precision, creativity, and bold flavors.
My time at Bistecca in Scottsdale, Arizona, with Chef Michael Chiarello deepened my appreciation for rustic Italian cuisine and refined techniques, while working with James McDevitt at Hapa introduced me to innovative Asian-fusion flavors and the art of balancing tradition with modern flair. These experiences have fueled my dedication to creating memorable dishes that are both thoughtful and deeply satisfying.
